For the Cross:

25 g plain flour
35 g water

For the Glaze:

10 g caster sugar
30 g water
¼ tsp mixed spice

Method:

1.Preheat Oven: Preheat oven to 220°C (200°C fan forced).
2.Combine Dry Ingredients: In a large bowl, combine self-raising flour, caster sugar, and mixed spice.
3.Rub in Butter: Rub the cold butter into the flour mixture until it resembles fine breadcrumbs.
4.Add Wet Ingredients: Stir in milk and sultanas until a dough forms.
5.Shape Scones: Turn the dough out onto a lightly floured surface. Roll out to a thickness of 25-30mm. Use a 50mm cutter to cut out scones.
6.Prepare the Tray: Place scones close together on a baking tray.
7.Make the Cross: Mix flour and water to form a thick paste. Transfer to a small piping bag or zip-lock bag with a small corner cut off. Pipe crosses onto scones.
8.Bake: Bake in preheated oven for 12 minutes, or until golden brown.
9.Make the Glaze: While scones are baking, combine sugar, water, and mixed spice in a small saucepan. Bring to a boil, then remove from heat.
10.Glaze Scones: Brush warm scones with sugar syrup.

Tips:

For a richer flavour, use a combination of dried fruits.
Serve warm with butter or jam.
Store in an airtight container for up to two days.
