RECIPES
Breakfast:
1/2 Avocado
1 Slice Rye Bread
Houmous to spread
Handful Watercress
Fresh Coriander to garnish
Salt and Pepper

Lunch:

Snack:
Smoothie at Planet Organic

Dinner:
Soba Noodle Stir Fry
1/2 pack Tempeh
1/4 pack Soba Noodles
1/2 tbsp Coconut Oil
1/2 Red Onion, sliced
1 Clove Garlic, sliced
Handful Tenderstem Broccoli
1/2 Red pepper, sliced
4 Chestnut Mushrooms, sliced
1/4 Red Chilli, deseeded and sliced
Handful Spinach
Sauce:
1/2 Lemon, juice only
1 tbsp Tahini
1 tbsp Tamari
2 tbsp Water
Garnish:
Toasted pine nuts
Fresh Coriander

1. Slice the tempeh into bitesize cubes and fry in a wok for a few minutes until golden.
2. Cook the soba noodles and drain, rinse with cold water, drain again and set aside.
3. While the noodles are cooking, fry the onion, chilli and garlic in a wok for a few minutes. Add the remaining vegetables apart from the spinach and for a few minutes minutes until the vegetables are tender.
4. In a separate pan, toast the pine nuts for a couple of minutes and set aside.
5. To make the sauce, simply whisk the tahini, lemon juice, water and tamari together with a fork in a small bowl and then stir into the wok with the cooked noodles and spinach.
6. Serve and scatter over some fresh coriander and the toasted pine nuts.
