Aloo Baingan Curry with Moong Dal Chawal | Comfort Food Tasty Pakistani Recipe | Aloo Baingan Sabzi
Full Recipe – Baingan Aloo with Daal Chawal
Ingredients
For Baingan Aloo:
2 green chillies
1-inch ginger piece (chopped)
1 medium onion
1/2 tsp cumin seeds
1 bay leaf
2 tomatoes (blended)
1/2 tsp red chilli powder
2 1/2 tsp coriander & cumin powder mix
1/2 tsp turmeric powder
Salt to taste
1 medium baingan (brinjal/eggplant), cut into pieces
2 potatoes, cut into cubes
1 glass water
Fresh coriander for garnish
For Daal Chawal:
1/4 cup oil
1 small onion (chopped)
1/2 tsp cumin seeds
2 cups rice (soaked 15–20 mins)
1 cup moong daal (soaked 15–20 mins)
Water as required
Method
Prep Masala:
Chop 2 green chillies with 1-inch ginger and keep aside. Cut baingan into pieces and soak in salted water for 5–10 mins.
Cook Base:
Heat water in a pan, add 1 medium onion. Once the color changes, add cumin seeds, bay leaf, red chilli, and the chopped ginger-green chilli mix. Stir well.
Add Tomatoes & Spices:
Add blended tomatoes, red chilli powder, coriander-cumin mix, turmeric, and salt. Cook till masala releases aroma.
Add Vegetables:
Add baingan and potatoes. Cook covered on low heat for 4–5 mins.
Simmer:
Add 1 glass water, cover, and cook on low heat for 12–15 mins until potatoes and baingan are soft. Garnish with fresh coriander.
Make Daal Chawal:
In another pan, heat oil, add onion and cumin. Fry till onion turns transparent. Add water, then soaked rice and moong daal. Let it cook till both are done.
