Cashew nuts (room temperature)
Sugar

Cardamom powder
Ghee (for greasing)

▶️ Prepare Cashews – Bring cashews to room temperature. Grind to a fine powder in short pulses (don’t over-grind or it will release oil).
▶️ Make Sugar Syrup – In a non-stick or heavy-bottom pan, add sugar & water. Heat until sugar dissolves and comes to a rapid boil.
▶️ Mix Cashew Powder – Lower the flame and add cashew powder. Mix well to avoid lumps.
▶️ Add Flavor – cardamom powder and 1-2 tsp ghee.
▶️ Cook to Right Consistency – Stir on medium heat until mixture leaves the sides of the pan (about 8–9 mins).
▶️ Knead & Roll – Transfer mixture onto greased parchment paper, cool slightly, knead for 1–2 minutes, and roll to ¼ inch thickness.
▶️ Cut & Serve – Cut into diamonds or squares. Store in an airtight container for up to 5–6 days.
