Gujarati Khichdi Kadhi
Ingredients :
For Khichdi:-
1/2 cup soaked Moong Dal (alternatively chilka moong dal or tuvar dal can be used)
1/2 cup soaked Rice
1 spoon Ghee
1 spoon Oil
2 Cloves (Laung)
1 tsp Mustard Seeds (Rai)
1 tsp Cumin Seeds (Jeera)
Pinch of Asafoetida Powder (Hing)
3 cup Water
1 tsp Turmeric Powder (Haldi)
Salt as per taste
For Kadhi :-
1 cup Curd (take sour curd)
2 tbs Gram Flour (Besan)
1 spoon crushed Ginger and Green Chilli
Water (as required)
Salt to taste
1 tbs Sugar
For Tempering:-
1 tsp Ghee
3 Cloves (Laung)
1 Cinnamon Stick (Dalchini)
1/2 tsp Fenugreek Seeds (Methi Dana)
1 tsp Mustard Seeds (Rai)
1 tsp Cumin Seeds (Jeera)
Pinch of Asafoetida Powder (Hing)
Few Curry Leaves
1 Dry Red Chilli
Chopped Coriander Leaves
Method :
To Make Khichdi:-
Heat 1 spoon Ghee in the pressure cooker
Add 1 spoon Oil
Add 2 Laung
Add 1 tsp Rai
Add 1 tsp Jeera
Add a pinch of Hing
Add 1/2 cup soaked Moong Dal
Add 1/2 cup soaked Rice
Add 3 cup Water
Add 1 tsp Haldi
Add Salt as per taste
Fix the lid and cook up to 3-4 whistles on medium heat
To Make Kadhi:-
In a bowl, take 1 cup Curd and whisk gently
Add 2 tbs Besan and again whisk well
Add 1 spoon crushed Ginger and Green Chilli
Gradually add Water and keep mixing it
Strain the mixture and take it into vessel
Keep stirring the mixture
Add Salt to taste
Add 1 tbs Sugar, mix it and cook up to 2 boils
Further for tempering heat 1 tsp Ghee in a pan
Add 3 Laung
Add 1 Dalchini
Add 1/2 tsp Methi Dana
Add 1 tsp Rai
Add 1 tsp Jeera
Add a pinch of Hing
Add few Curry Leaves
Add Dry Red Chilli
And pour this Tadka on curry
Mix it and turn off the heat
Add chopped Coriander Leaves
Take Kadhi in a serving bowl and Khichdi on a serving plate
Enjoy Scrumptious Gujarati Khichdi with Ghee & Achar on top & Delicious Kadhi
