Continuing our sherry & fire series for @sherrywinesjerez , @sherrymonster44 & @genevieveeats present to you an immense dish of oak fired clams with presa ibérica de bellota (one of the finest meats known to man/woman/earth), caramelised onion, Trotter stock & viña AB amontillado.

Suffice to say that we stuffed ourselves silly in the rain after this with grins on our faces.... it was so good!

Fresh fennel tops from the allotment to freshen things up, and a glass of the same amontillado to pair was just the perfect partner. Gracias @gonzalezbyassuk for this wonderful sherry.
