Green Lentil Bread
A gluten-free, protein-rich loaf made with green lentils. Great for breakfast, as a snack, or even a light meal.
1.5 cups green lentils,320 g, soaked overnight
4 eggs
80 ml olive oil, 1/3 cup
1 teaspoon baking powder, 10 g
1 teaspoon salt
1 cup plain savoury yogurt, 260 g
• Rinse the lentils and soak them overnight in plenty of water. This softens them and makes blending easier.
• The next day, drain and rinse the lentils well. Transfer them to a food processor.
• Add the eggs, olive oil, yogurt, baking powder, and salt into the processor with the lentils. Blend everything until smooth and creamy—scrape down the sides if needed to ensure an even texture.
• Lightly grease a loaf pan or cake mold and pour in the batter. Smooth the top with a spatula.
• Bake in an air fryer at 180°C (356°F) for 32 minutes or in a preheated oven at 180°C (356°F) for 45 minutes to 1 hour. The bread should be golden on top and set in the centre. A toothpick inserted should come out clean.
• Let it cool at room temperature before slicing—it will hold together better once cooled. Enjoy your gluten free, delicious lentil bread!
•For the crepe version, add an egg to the same mixture and ladle it into a pan to cook like a crepe.
•For the brownie version, leave out the salt and instead add sugar, cocoa powder, or even melted chocolate for a rich twist!
Savory Olive & Cheese Version
Stir into the batter or gently fold in before baking:
150–200 g white cheese, cut into large cubes
2–3 sprigs spring onion, finely chopped
6–8 sprigs of dill, finely chopped
10–15 black olives, pitted and halved
