Craving healthy and flavorful Mediterranean Platter? Look no further! In this video, Natasha Gandhi shares simple and easy-to-follow recipes for Baba Ganoush, Muhammara, and Millet Falafel, all made using the Borosil Air Fryer.
Baba Ganoush-
Ingredients:
• 1 large eggplant
• 5-6 garlic cloves
• 1/3 cup yogurt
• Salt, to taste
• Lemon juice
• 1 tsp paprika powder
• Olive oil, for garnish
• Pomegranate seeds, for garnish
• Sumac, for garnish
• Coriander or parsley leaves, for garnish
Instructions:
1. Cut the eggplant in half and roast it in the air fryer at 200°C until soft.
2. Remove the skin and grind the flesh with garlic, yogurt, salt, lemon juice, and paprika powder. Blend to a slightly coarse consistency.
3. Place the baba ganoush on a plate, drizzle with olive oil, and garnish with pomegranate seeds, sumac, and coriander or parsley leaves.
Muhammara-
Ingredients:
• 2 red bell peppers
• 1-2 tbsp peanuts
• 1-2 tbsp breadcrumbs
• 1-2 tbsp walnuts
• 2 garlic cloves, chopped
• 1 tbsp pomegranate molasses
• 2 tbsp tomato puree
• 1 tsp harissa
• 2 tsp sumac powder
• Walnuts and parsley leaves, for garnish
Instructions:
1. Cut the red bell peppers in half and roast them in the air fryer at 200°C.
2. Remove the skin and grind the flesh with peanuts, breadcrumbs, walnuts, garlic, pomegranate molasses, tomato puree, harissa, and sumac powder to a coarse texture.
3. Place the muhammara on a plate and garnish with walnuts and parsley leaves.
Millet Falafel-
Ingredients:
• 300g barnyard millet, boiled
• 5-7 garlic cloves
• 2 onions, quartered
• A few coriander sprigs
• Salt, to taste
• 1 tsp cumin powder
Instructions:
1. Transfer the cooked millet to a chopper and add garlic, onions, coriander, salt, and cumin powder. Grind to a coarse texture.
2. Shape the mixture into falafel using two spoons.
Lavash-
Ingredients:
• Whole wheat flour
• Jowar flour (equal amounts)
• A pinch of salt
• 1 tbsp oil
• Sesame seeds, zaatar, and sumac (for topping)
Instructions:
1. Combine the flours, salt, and oil in a bowl. Knead into a tight dough using water. Rest for 10 minutes.
2. Roll the dough thinly and sprinkle with sesame seeds, zaatar, and sumac.
3. Cut into triangular shapes and bake in the air fryer at 200°C for 8 minutes.
Serve baba ganoush, muhammara, and millet falafel with freshly baked lavash for a delightful Mediterranean-inspired platter!
