Hello all,

Tambdi bajji randayi or red amaranth curry is healthy yet delicious wholesome dish. served with White Rice ,Upkari(stir fried veggies) along with some pickle served onside. This Curry does not contain Onion and Garlic. hence it is knows as a satvik bhojan as well.

Ingredients

Tambdi Bajji randayi(Red amaranth curry)
1) 1 Big bunch Red amaranth chopped
2) 3-4 Vadi's(ash gourd fritters)
3) 1 Cup Fresh Coconut
4) 2 tsp Coriander seeds
5) 4-5 Red Chilies
6) 1/4 Turmeric
7) small piece of Tamarind
8) Salt to taste
9) 1 tsp Mustard seeds
10) 1/4 tsp Asafoetida powder
11) 2 tbsp Oil
