🥣 Caribbean-Southern Pumpkin Ham Hock Soup
• 2 smoked ham hocks
• 1 can pure pumpkin purée (15 oz)
• 1 medium potato, cubed (or 2 tbsp instant potato flakes)
• 1 cup onion, ½ cup carrot, ½ cup celery (mirepoix)
• 2 garlic cloves, minced
• 4 cups low-sodium chicken broth + 2 cups water
• ¼ tsp ginger, ¼ tsp allspice, ½ tsp smoked paprika, 1 bay leaf
• 1–2 tsp Caribbean brown sugar sauce or Kitchen Bouquet
• ½ cup lactose-free milk added at the end
• Cook slow until ham falls off the bone; shred, stir back in, and serve with cornbread.

🍗 Chicken & Vegetable Soup (Tomato Base)
• 3–4 chicken drumsticks, lightly seasoned and browned
• 1 can peas & carrots
• 1 small can tomato paste or ½ jar Newman’s Own tomato sauce
• 1 small onion, 1 stalk celery, diced
• Season with garlic powder, onion powder, thyme, and a pinch of sugar
• Add 4 cups water or broth and simmer until chicken pulls apart.
• Perfect with crackers or sweet tea on the side.

🐂 Oxtail Stew (15-Bean & Brown Gravy Style)
• 2–3 lbs oxtails, browned
• 1 pack 15-bean soup mix (with the ham seasoning packet)
• 1 tbsp Kitchen Bouquet or brown gravy base
• ½ tsp allspice, onion, celery, carrots
• 6 cups water or beef broth
• Simmer low and slow until tender and rich — like brown chicken sauce but on oxtails.
