Funfetti Vanilla Cake:

270g all purpose flour
300g sugar
90g room temp unsalted butter
¾ teaspoon baking soda
¾ teaspoon salt
2 ¼ teaspoon baking powder
⅓ cup canola oil
3 large eggs
135g sour cream
1 ½ tablespoon vanilla extract
⅓ cup milk
¼ cup rainbow sprinkles

1. Combine all dry ingredients plus the butter into your mixing bowl
2. Mix on low speed until the butter has been incorporated, there should be no chunks left, just small crumbs.
3. In a separate bowl whisk the wet ingredients except the milk
4. Pour the wet mixture into the dry ingredients and mix on low speed until incorporated
5. Slowly add the milk and fold in the sprinkles, don’t over mix.
6. Spray the cake pan well.
7. Bake at 325°F for 35 to 40 minutes or until a toothpick comes out clean.

Note: I made extra batter in the video to make cupcakes, that’s why the recipe written is a little less.

Mini Hello Kitty cake pan review: The pan is very thin and fragile, because of this my cake came out quite dark. Not great quality but still worth it because Hello Kitty!! 5/10

American Buttercream:

1 cup room temp unsalted butter
4 cups icing sugar
Pinch of salt
2 teaspoon vanilla extract
2 tablespoons milk

1. Whip your butter on high speed until it’s lighter in colour and fluffy
2. Gradually add icing sugar a little at a time or you’ll end up with a mess hehe
3. Add the vanilla and milk
4. Continue to mix on a high speed until everything is fluffy, up to 5 minutes.

To decorate I dyed about ¼ cup of icing red, 1 tablespoon yellow, and 4 tablespoons black. For the tips I used Wilton 21 for the white and red, and Wilton 7 for the black outline and whiskers.
