Butterfly a slab of pork belly and then coat 1 side in brown sugar and sprinkle cinnamon.

Tightly roll up the pork belly from end to end and then slice into 1 to 1.5" thick slices and place on a wire rack.

Sprinkle bbq rub and cinnamon on each side of the rolls, then cover 1 side completely with brown sugar.

Smoke on indirect heat at 275 degrees until pork belly hits 180 internal.

While meat is smoking, add some butter, brown sugar and a shot of whiskey into a small foil pan and place on smoker (to make the caramel sauce)

Place rolls in a foil pan and pour over the caramel sauce, then cover pan with aluminum foil, and place back on grill until meat hits 200 internal.

Once pork belly is at 200 and very soft and ready to eat - sear each roll on both sides, on a griddle or pan.

Plate the rolls and pour over the caramel sauce.

Serve and enjoy!
