Recipe

500g of stale bread
650ml of cold tea
250g of raisins/sultanas
200g of soft brown sugar
2tsp of mixed spice
1/2 tsp of nutmeg
1/2tsp of cinnamon
1/2 tsp of ginger
2 tbsp of treacle
1 large egg
60g of plain flour
1 tsp of baking powder

Pastry

450g of plain flour
260g of butter
110g of icing sugar
1 egg


This is an old school cake which is really popular back home. It’s made up of a mixture of bakery leftovers, stale bread, dried fruit, and a few other components to add a bit of flavor. This is then baked between two layers of shortcrust pastry and topped with icing sugar or white and chocolate icing

It’s a cake made from leftovers. It came about in the early 1900’s. Kids that went on the bonk from school aka “Went on the Gur” were referred to as “Gurriers” This cake was cheap and something that they would buy so that’s how it got its name

The cake is also know as Chester Slice, Donkey’s Gudge, Fruit Slice, Chester Squares, Chester Buns. I’m sure it has a few others too. Just write them in the comments if you know any

I only used half the dried fruit in the video as the kids are not too keen on it. The recipe at the start of the video stated the correct amount
