[RECIPE BELOW] On the menu is the most incredible roast chicken marinated in a sweet, spicy mixture of gochujang and honey. What a beautiful flavour combo and the colour it gives the chook is amazing! I'm serving this with Sesame Broccoli - a super simple, healthy, irresistible way to dress up the humble broccoli. Rice and kimchi are absolutely necessary staples for me!

Serves 4-6
INGREDIENTS
MARINADE
2-3 tbsp gochujang
2 tbsp light soy sauce
1 tbsp honey
1-2 tbsp vinegar
2 tsp garlic powder (or 4 minced garlic cloves)
1 tsp cracked pepper
2 tbsp sesame oil
2 tbsp neutral oil

2kg whole chicken

3 cups rice

SESAME BROCCOLI
white sesame seeds
2 large heads of broccoli
6 cloves garlic
1/3 cup water
1-2 tbsp sesame oil
1-2 tbsp light soy sauce

TO SERVE
Sliced spring onions
Kimchi

METHOD
1. Mix all the marinade ingredients in a bowl until the oil is completely incorporated. Set aside.
2. Remove the excess fat from the cavity of the chicken. Then cut down one side of the backbone. Lay the chicken out flat o the bone side. Place your hand on the breast of the chicken, pressing down until it cracks to butterfly or spatchcock the chicken.
3. Spread 3/4 of the Marinade over the chicken, coating both sides. Let the chicken marinade for at least 30 minutes. Overnight in the fridge gives best results.
4. Pre-heat the oven to 180C. Place the chicken on a rack over a lined tray. Then roast the chicken for 70 minutes.
5. When there is 30 minutes remaining on the roasting chicken, wash your rice and cook it with your preferred method. Then stir the remaining marinade until fully incorporated and baste over the chicken. Let the chicken cook for the remaining time.
6. Break the florets of the broccoli down into a uniform size, and slice the stem. Mince the garlic. Set both aside. The chicken should be done at this time, remove from heat and allow to rest for 15 minutes on a plate.
7. Toast the sesame seeds in a dry pan. I toast way more than I need and the keep them in an airtight container.
8. In a pan on medium-high heat, add the broccoli and water. Place the lid on and steam for 3-4 minutes. Once the broccoli is cooked, and there is no water in the pan (you may need to pour off excess), add the garlic, sesame oil and soy sauce. Stir fry until well mixed. Turn off heat then add the sesame seeds and toss again.
8. Carve the chicken, garnish with sesame seeds and sliced spring onion.

Serve the chicken with the broccoli, kimchi and rice!
