Moong dhal, mung beans or mugh makes for a delicious and nutritious vegetarian meal no matter the name you actually call it. It can be cooked with brinjal, like gram dhal normally is, or with potatoes like I made in this video.

Ingredients:
1 cup Moong dhal, soaked overnight. Any moong dhal that remains hard will need to be boiled for a short time.
3 med potatoes, deep fried
1 small onion, sliced
Curry leaves
2 cinnamon sticks
1/2 tsp dried thyme
1 tsp crushed ginger and garlic
1 tbs mixed masala
1 tsp hurdee
1 1/2 tsp fine salt
3 small tomatoes, grated
1/2 cup oil
Dhania to garnish

Serve with roti and vegetable pickles or salad or nuts chutney!
