This traditional recipe from my Nan is buttery, crumbly and screams of traditional Christmas sweets. It's very easy to make and only requires four ingredients. Biting into a piece of this shortbread sends me back to Christmases of old, surrounded by family, opening presents and being surrounded by family.

Ingredients:
• 65g/2.3oz Icing Sugar
• 250g/8.8oz Butter
• 210g/7.4oz Plain Flour
• 34g/1.2oz Rice Flour

Method:
1) Preheat your oven to 160ºC/320ºF, without fan.
2) Line a baking dish of choice (I use a spring form cake dish) with baking or parchment paper.
3) Combine sugar and butter using a hand or stand mixer with the wisk attachment.
4) Sift in flours one third at a time, stirring to combine into a dough.
5) Lightly knead the dough (do not overwork it!) into a round ball.
6) Place the dough in you baking dish.
7) Bake for 40-50 minutes depending on your oven.
8) When lightly brown on top, retrieve your shortbread.
9) Optionally, dust the top with sugar.
10) Allow to cool completely before cutting into pieces with a sharp bread knife.
