Mozzarella cheese ball is a popular Korean snack that is often served with Korean fried chicken. Its crispy, chewy crust harmonises perfectly with melted mozzarella cheese inside, making it an addictive snack that you just want to keep chewing and enjoy the savoury, creamy balls. Its signature cheese stretch is the reason why it’s been trending in Korea!

How to make mochi cheese balls?
The outer crust contains mainly of glutinous rice flour, which makes the mochi balls super chewy and addictive. First, prepare the mochi by mixing all the ingredients thoroughly. Let it rest for 30 mins, then divide the dough into equal pieces and wrap around mozzarella cube. When wrapping the cheese inside the mochi, make sure you have plenty of space to wrap. Otherwise, the cheese will split out when deep frying and the water content in the cheese may burst from the surface of hot oil, making oil splatters and explode your kitchen! So be sure to keep the hot oil at 180°C and the balls are dry before frying.

Ingredients
100g glutinous rice flour
25g plain flour
70ml warm water
15g butter at room temperature
1 tbsp sugar
1/8 tsp baking powder
1/4 tsp salt
Mozzarella cheese
