Crispy, flaky and tasty fulkopir shingara or samosa with masala chai can make winter evenings perfect. Today, I will share with you step by step instructions to make samosas.

What you will need:
• Cauliflower: 1
• Beet root: ½
• Green Peas: ½ cup
• Peanuts: 1/3 cup
• Coconut (chopped) : ¼ cup
• Potatoes: 8 – 10 boiled and mashed
• Ginger: 1 inch piece
• Green chilles: 5 -6
• Dry red chillies: 4-5
• Panch phoron 1 tsp
• Oil for deep frying
• Maida: 2 cups
• Salt: 1 tsp ( as per taste)
How to make
• To prepare the filling for samosa you will need 1 cauliflower cut into pieces, ½ beetroot, ½ cup peas, 1/3 cup peanuts, 1/4 cup chopped coconut, 8-10 boiled potatoes, 1 inch piece of ginger and some green chillies.
• To prepare the masala I have taken 1 tsp roasted jeera powder, 1 tsp coriander or Dhania pwd, 1 tsp haldi pwd, 1 tsp red chilli pwd, 1 tsp aamchur pwd, 1 tsp garam masala pwd and 1 tsp rock salt
• Now heat 2 tsp of oil and roast the peanuts for 5 mins, once done I will remove them and keep aside. add a little oil and fry the cauliflower florets and keep aside.
• Lets add oil once again now add 4-5 red chillies,1 tsp Panch phoron. Once it starts to splutter, add 1 tsp of ginger paste. Cook for a few seconds and add chopped green chillies. You can add green chillies as per your taste
• Now add the green peas, chopped beet root, and fry for a minute or two. Add salt as per taste and then add the chopped coconuts, fried peanuts
• Add the spices that we have kept aside. we will fry for a minute or two and then add the mashed potatoes and mix them well. Add the fried cauliflowers to this stuffing and mix well.
• Prepare the dough for our crispy samosas. For this you will need 2 cups of maida or all purpose flour.
• Add ½ tsp of salt and 3-4 tsp of oil and mix well. It should form like this. Now add little water at a time and mix gently and create a hard dough.
• Now divide the dough into equal portions to make the balls. Take one and roll it out like a puri. It should not be too thin. cut the puri into two halves and make a cone shape as shown.
• Put the filling inside. Apply a little water along the edges to seal it properly like this.
• It time now to fry them. I have taken oil in a kadhai for deep frying. Remember that the oil should be medium hot.
• My samosas are ready to serve. I have prepared green chutney to serve them and also masala chai to make my winter evening warm and perfect.
