This is one of the OG desserts of Kolkata that was a must at every restaurant/clubs/parties. It’s indulgent, delicious & can be frozen for upto 3 months. Let’s make this.

200 gms vanilla sponge (you can also use digestive biscuits - dip the biscuits in milk before lining your dish)
300 ml vanilla icecream
300 ml chocolate icecream
1/4 cup chocolate chips
1/4 cup nougat (you can also use readymade butterscotch)
1/4 cup ganache
Cut the sponge into thin slices. Line your bowl/mould with the sponge. Add a layer of the vanilla icecream & smoothen it. Top it with ganache, chocolate chips & nougat. Add a layer of sponge on it. Top it with chocolate icecream followed by ganache, chocolate chips & nougat. Cover it with another layer of sponge cake & press it down firmly. Freeze this for 4-5 hours or overnight. Take this out of the freezer 10 minutes before serving. Cut into slices, serve immediately with some more ganache & dig in.!

Nougat
1/2 cup sugar
2-3 tbsp water
1/2 cup cashews
Caramelise the sugar & water till it turns an amber colour. Turn off the flame & add in the cashews. Mix well & spread on a parchment paper. Let it cool & then break into small chunks.

Ganache
100 gms dark chocolate
100 gms cream
Chop the chocolate into small chunks. Add the cream & heat it for 2 minutes in a microwave in 30 second intervals.
