Eggless Whole Wheat Tiramisu. Refined sugar free. Soft coffee soaked sponge with whipped mascarpone

This version of Tiramisu aims at creating the same flavours of a traditional Tiramisu with a freshly made sponge cake and a whipped mascarpone frosting/filling and one that is completely eggless, refined sugar free and refined flour free. But very soft and delicious!

Single Layer Tiramisu:

For the cake:

1 cup - Milk
2 tsp - Apple Cider Vinegar
1/3 cup - Raw Sugar/Jaggery
3 tbsp - Ghee
1 cup - Whole Wheat Flour/Aata
2 tbsp - Corn Flour
1/4 tsp - Salt
1 tsp - Baking Powder
1/2 tsp - Baking Soda
1 tsp - Vanilla Extract

For the coffee syrup:

1/4 cup - Water
1 tbsp - Instant Coffee Powder
1 tbsp - Jaggery
1/4 cup - Coffee Liquor (optional)
Total syrup needed - 60 ml

For the frosting:

1/3 cup - Fresh Cream
1 tbsp - Instant Coffee Powder
50g - Powdered sugar
150g - Mascarpone cheese
15g - Cocoa butter

Double Layered Tiramisu:

For the cake:

1.5 cup - Milk
1 tbsp - Apple Cider Vinegar
1/2 cup - Raw Sugar/Jaggery
1/4 cup - Ghee
1.5 cup - Whole Wheat Flour
3 tbsp - Corn Flour
1/2 tsp - Salt
2 tsp - Baking Powder
1 tsp - Baking Soda
1.5 tsp - Vanilla Extract

For the coffee syrup:

1/4 cup - Water
2 tbsp - Instant Coffee Powder
2 tbsp - Jaggery
1/4 cup - Coffee Liquor (optional)
Total syrup needed - 100 ml


For the frosting:

1/2 cup - Fresh Cream
1.5 tbsp - Instant Coffee Powder
75 g - Powdered sugar
225 g - Mascarpone cheese
22 g - Cocoa butter
