Tuna Pasta Salad with Cucumber, Tomato, and Sweetcorn

Ingredients

100g pasta

1/4 cucumber, finely diced

1 tomato, finely diced

1/2 onion, finely diced

1/2 cup sweetcorn

Fresh parsley, chopped

2 cans tuna, drained

For the Sauce

4 tbsp low-fat mayonnaise

4 tbsp low-fat Greek-style yoghurt

2 tbsp vinegar

Juice of 1/2 lemon

1/2 tsp salt

1 tsp mustard

Garnish

Chilli flakes

Black pepper

Instructions

Cook the Pasta:

Cook 100g of pasta according to the package instructions.

Drain and rinse the pasta with cold water to stop the cooking process and cool it down.

Prepare the Vegetables:

Finely dice 1/4 of a cucumber, 1 tomato, and 1/2 an onion.

Add the diced vegetables to a large mixing bowl along with 1/2 cup of sweetcorn and some chopped fresh parsley.

Add the Tuna:

Drain 2 cans of tuna and add them to the bowl with the vegetables.

Make the Sauce:

In a separate bowl, mix together 4 tbsp low-fat mayonnaise, 4 tbsp low-fat Greek-style yoghurt, 2 tbsp vinegar, the juice of 1/2 lemon, 1/2 tsp salt, and 1 tsp mustard until smooth and well combined.

Combine and Mix:

Pour the sauce over the pasta salad mixture.

Sprinkle with chilli flakes and black pepper to taste.

Mix everything very well until the pasta and vegetables are evenly coated with the sauce.

Serve:

Serve the salad with crackers for a delightful meal.
