This is one yoghurt dessert recipe you probably never heard of. In West African countries, it is known as Dégué, or Dégué de mil. Until I discovered this dish, I never imagined yoghurt and pearl millet could actually be used together, let alone in a dessert recipe. It makes for a cool and refreshing summertime dessert.

I have seen that different people make this yoghurt dessert in many different ways. What I've shown here is a version that works best for me. Go ahead and give this a try!

Ingredients for Dégué de mil:

Unsweetened yoghurt - 500 gms
Condensed milk - 5 to 6 tbsp (more if you prefer a sweeter version)
Milk - 1 cup
Pearl millet flour - 1 cup
Salt - a pinch
Nutmeg powder - 1 tsp + 1/2 tsp.

Directions:

1. Whisk together yoghurt and condensed milk in a bowl until smooth and lump free. Add milk and nutmeg powder and set aside for 2 hours.

2. Mix pearl millet flour, a pinch of salt and nutmeg powder in a separate bowl. Adding water a little at a time, work the millet flour until it is granulated (as shown in video).

3. Steam it for about 15 minutes. Let cool.

4. Add the granulated millet (we can call it millet couscous) to the yoghurt mixture. Mix well and refrigerate until chilled.

5. This can be stored in the freezer and had as a frozen yoghurt dessert as well.
