A classic Indian street food! Pav Bhaji Masala is a flavorful spice blend used to make the popular dish Pav Bhaji. Here's a simple recipe to make Pav Bhaji Masala at home:

Ingredients:

- 2 tablespoons coriander seeds
- 1 tablespoon cumin seeds
- 1 tablespoon cinnamon stick
- 1 tablespoon cardamom pods
- 1 tablespoon cloves
- 1 tablespoon black peppercorns
- 1 tablespoon cayenne pepper (optional)
- 2 tablespoons garam masala powder
- 1 tablespoon turmeric powder
- 1 tablespoon red chili powder

Instructions:

1. Dry roast the coriander seeds, cumin seeds, cinnamon stick, cardamom pods, cloves, and black peppercorns in a pan until fragrant.
2. Let the mixture cool, then grind into a fine powder using a spice grinder or mortar and pestle.
3. Mix in the cayenne pepper (if using), garam masala powder, turmeric powder, and red chili powder.
4. Store the Pav Bhaji Masala in an airtight container for up to 6 months.

To make Pav Bhaji, sauté onions, garlic, ginger, and a mixture of vegetables (like potatoes, carrots, peas, and cauliflower) in oil. Add the Pav Bhaji Masala and tomato puree. Serve with toasted bread (pav) and garnish with cilantro, onions, and a dollop of butter!
