The current concentration of carbon dioxide in Earth’s atmosphere is 415 parts per million. Is that a lot or a little? What is a “part per million,” and what impact does a trace gas – or any trace component in the environment – have on the system as a whole?

In this video we’ll explore a variety of trace elements with our five senses; sight, sound, small, taste, and touch. We compare percent (parts per hundred) with parts per million and parts per billion, and look at the profound impact that trace components have, all around us, every day.

Peppermint Ice Cream Recipe (after David Lebovitz)
1 cup (250ml) whole milk
1 cup (200g) sugar
pinch of salt
5 large egg yolks
2 1/4 cups (560ml) heavy cream
2 1/2 teaspoons peppermint extract
Heat milk, salt and sugar in a saucepan. Beat egg yolks in a separate bowl, and add a little warm milk to the yolks while stirring. Return the yolk/milk mix to the saucepan. Cook on low heat, stirring constantly, until custard thickens. Remove from heat and slowly add cream while stirring. Add peppermint extract, stir, and refrigerate overnight. Freeze in an ice cream maker, adding crushed peppermint if desired, as the ice cream thickens. Enjoy!
