These ribs are absolutely amazing!
Beer brine is a typical polish flavour, but the apple glaze is mostly asian - I was trying to copy kosmos q and switched to asian style.
Method to prepare the ribs is inspired by 3-2-1 method, but it's faster - 2 hours of smoking 1 hour ribs are wrapped in a foil and one minute of grilling with a glaze on. It is not very low and slow method, but pork remains moinst and tender. Really perfect if you have only a couple of hours to prepare the delicious bbq. The dish is made on a charcoal grill - Kacper Salzman will show how to start a charcoal grill, and how to control the temperature on a weber kettle, and also how to smoke and what wood to choose.
Recipe:
brine
2,5kg of ribs
150g salt
50g sugar
1 onion
1 thumb size ginger
1 branch of rosemary
1 lemongrass
a couple of lime leaves
1 l hot water
0,5 l beer
Rub
1 tablespoon of paprika
2 tablespoons of marjoram
1 tablespoon of pepper
1/2 tablespoon of cumin
Glaze
3 garlic cloves
ginger
habanero
100g sugar
cachaca or rum - 50ml
apple juice 200ml
soy sauce - 2 tablespoons
fish sauce - 1 tablespoon
rice vinegar 50ml
1 tablespoon of starch
a couple of dashes of water
