𝗖𝗵𝗲𝗰𝗸 𝗼𝘂𝘁 𝘁𝗵𝗲𝘀𝗲 𝗿𝗲𝗰𝗶𝗽𝗲𝘀 𝘁𝗼𝗼:

TAWA CHICKEN MASALA
Preparation time 10 minutes
Cooking time 25-30 minutes
Serve 2-4

Ingredients
For Ginger Garlic Paste
1 inch Ginger (peeled & roughly chopped) अदरक
8-10 no. Garlic cloves, लहसुन
3-4 no. Green chillies (less spicy & roughly torn) हरी मिर्च
Salt to taste, नमक स्वादअनुसार

For Chicken Marination
Prepared Ginger Garlic Paste, अदरक लहसुन का पेस्ट
1 kg Chicken thighs (boneless & cut into strips) चिकन
2 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 tbsp Oil, तेल

For Masala
½ tbsp Cumin seeds, जीरा
1 tbsp Coriander seeds, धनिये के बीज
1 tsp Fennel seeds, सौंफ
¼ tsp Fenugreek seeds, मेथी दाना
1 ½ tbsp Black peppercorns, काली मिर्च के दाने
2-4 no. Cloves, लौंग
3 no. Black cardamom, बड़ी इलायची
2 no. Mace, जावित्री
Salt to taste, नमक स्वादअनुसार
1 tbsp dry Fenugreek leaves, crushed, कसूरी मेथी
1 inch Cinnamon stick, दालचीनी

For Sauteing Chicken
2-3 tbsp Oil, तेल
Marinated Chicken, मैरीनेटेड चिकन

For Tawa Chicken
Remaining excess oil, बचा हुआ तेल
2 no. Bay leaf, तेज पत्ता
3 no. large Onions, chopped, प्याज
½ tsp Turmeric powder, हल्दी पाउडर
½ tbsp Coriander powder, धनिया पाउडर
½ tbsp Degi red chili powder, देगी लाल मिर्च पाउडर

3 no. large Tomatoes, chopped, टमाटर
¼ cup Water, पानी
2 tbsp Butter, cubed, मक्खन
1 tbsp Tender Coriander stems, finely chopped, धनिये के डंठल
Sauteed Chicken, भुना हुआ चिकन
2 tbsp Prepared Masala, तयार किया हुआ मसाला
2-3 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता
2 no. Green chillies (less spicy & chopped) हरी मिर्च

For Garnish
Fried Cashew Nuts, तले हुए काजू
Lemon wedge, नींबू की फांक
Coriander sprig, धनिया पत्ता
Ginger, julienned, अदरक

Process
For Ginger Garlic Paste
● In a mortar pestle, add ginger, garlic, green chillies, salt to taste and grind it coarsely.
● Keep it aside for further use.

For Chicken Marination
● In a bowl, add prepared ginger garlic paste, chicken thighs, degi red chili powder, oil and marinate it well.
● Keep it aside for 10-15 minutes.

For Masala
● In a pan, add cumin seeds, coriander seeds, fennel seeds, fenugreek seeds, black peppercorns, cloves, black cardamom, mace, salt to taste and roast them for a while until aromatic.
● Transfer it to a tray, add dry fenugreek leaves, cinnamon stick and mix it well.
● Transfer it to a mixer grinder jar and grind it smoothly.
● Keep it aside for further use.

For Sauteing Chicken
● On a cast iron tawa or pan, add oil, once it's hot, add marinated chicken and saute it for a while until half cooked on medium to high flame.
● Transfer it into the dish or tray and keep it aside for further use.

For Tawa Chicken
● On the same tawa, add remaining excess oil, once it's hot, add bay leaf, onions and cook for 4-5 minutes until translucent.
● Add turmeric powder, coriander powder, degi red chili powder and cook it for a minute.
● Add tomatoes, water and cook it for 2-3 minutes until soft.
● Add butter, tender coriander stems, sauteed chicken and cook it well for 7-8 minutes.
● Finish it with some prepared masala, coriander leaves, green chillies and mix it well.
● Transfer it to a serving dish, garnish it with fried cashew nuts, lemon wedge, coriander sprig and ginger.
● Serve hot with ladi pav.
