Classic creamy homemade mushroom risotto recipe topped with seared mixed mushrooms, chives and parmesan. The mushroom flavor in this risotto is very intense and that's because we made our own stock. I used trumpet and brown button mushrooms on top of the risotto. Just use whatever is available. Please like and subscribe!

Recipe for the stock: Button mushroom 3 cups, 2 onions, porcini dried mushrooms 1/2 cup, parsley stems, 2 carrots, 2 celeries, thyme and bayleaves and peppercorn.

Recipe for risotto: shallots 1/4 cup, arborio rice 2 cups, white wine 1/2 cup, grated parmesan 1/4 cup, mixed mushrooms, chives and garlic & rosemary.
