This is a recipe served on the passenger trains of the Atlantic Coast line. They served two Sole options on their trains: The Filet in Spanish Sauce, which was served as a dinner option, and this Sole Cubanese which was served as a lunch option.

It is quite light, and extremely tasty. Good quality Sole fillets are a necessity here, along with fresh veggies - onion, sweet peppers and tomatoes. It's very simple to make, as long as you have a good food processor or chopper, as the onion and peppers need to be chopped quite fine. This will serve at least four.
