Ingredients:
For marination:

500g mutton (goat/lamb pieces with bones)
1 cup yogurt (curd)
1 tsp ginger paste
1 tsp garlic paste
1/2 tsp turmeric powder
1 tsp red chili powder
Salt to taste
For curry:

3 tbsp ghee (clarified butter) or mustard oil
2 large onions, finely sliced
2 medium tomatoes, pureed
2-3 green chilies, slit
1 tbsp ginger-garlic paste
1/2 tsp turmeric powder
1 tsp red chili powder
2 tsp coriander powder
1 tsp cumin powder
1/2 tsp garam masala
1 bay leaf
2-3 green cardamoms
4-5 cloves
1 small cinnamon stick
Fresh coriander leaves, chopped (for garnish)
Instructions:
Marinate the mutton:

In a bowl, mix mutton with yogurt, ginger paste, garlic paste, turmeric powder, red chili powder, and salt.
Cover and refrigerate for at least 1 hour (preferably overnight for deeper flavor).
Cook the curry:

Heat ghee or mustard oil in a handi or a heavy-bottomed pot.
Add whole spices (bay leaf, cardamoms, cloves, and cinnamon) and let them sizzle.
Add the sliced onions and sauté until golden brown.
Stir in ginger-garlic paste and cook until the raw smell disappears.
Add spices and tomatoes:

Add turmeric, red chili powder, coriander powder, and cumin powder. Mix well.
Pour in the tomato puree and cook until the oil separates from the masala.
Cook the mutton:

Add the marinated mutton to the handi and mix well with the masala.
Cover and cook on low heat, stirring occasionally, for about 40–50 minutes until the mutton is tender. Add water as needed to adjust the consistency.
Finishing touches:

Sprinkle garam masala and green chilies. Mix and let it simmer for another 5 minutes.
Garnish with fresh coriander leaves.
Serve hot:
