Happy Saturday! Who's ready for some brunch!? On the menu today is a challah bread French toast stuffed with an apple pie + carrot cake inspired filling, smeared with cinnamon butter and drizzled with maple cream cheese icing!

How I did it:

1. Make filling by sauteeing a few apples that have been cored, sliced and halved in about 3 tbsp butter, 1/2 C brown sugar, a tsp of pumpkin pie spice, a pinch of salt and juice of half a lemon. Because I am not happy with the addition of the carrots yet, just go ahead and leave them out for now, or use a carrot bread. Cook until apples have softened but still have a bit of a bite.
2. Once your filling is done, slice your challah into ~ 2 inch slices, make a slit down the center of each and stuff with filling.
3. Crack 5 or 6 eggs into a dish and add about 1/3 C milk and some pumpkin pie spice and whisk. Dip each piece of your French toast in on both sides, letting the excess drip off and then pan fry in butter on each side until golden brown.
4. For the cinnamon butter, I didn't measure, I just mixed a few tablespoons of butter with a liberal sprinkling of cinnamon. For the maple cream cheese icing, mix 6 oz cream cheese with 1/3 cup maple syrup, or whatever ratio you'd like honestly. I liked it a bit thicker so it looked more like icing and less like syrup.
5. Then just slather your toast with butter, drizzle with icing and serve!
