Make & Store Beef Biryani
Serves 4-5
Recipe in English:
Ingredients:
-Hari mirch (Green chillies) 7-8
-Podina (Mint leaves) handful
-Hara dhania (Fresh coriander) handful
-Lemon juice 3-4 tbs
-Dahi (Yogurt) whisked 1 & ½ Cup
-Adrak lehsan paste (Ginger garlic paste) 3 tbs
-Namak (Salt) 1 tbs or to taste
-Zeera (Cumin seeds) roasted & crushed 1 tbs
-Lal mirch powder (Red chilli powder) 1 & ½ tbs or to taste
-Haldee powder (Turmeric powder) 1 tsp
-Saunf (Fennel seeds) crushed ½ tsp
-Garam masala powder ½ tbs
-Hari elaichi (Green cardamom) 7-8
-Sabut kali mirch (Black peppercorns) ½ tsp
-Darchini (Cinnamon sticks) 2-3
-Dhania powder (Coriander powder) 1 tbs
-Tez paat (Bay leaves) 3-4
-Pyaz (Onion) fried 1 Cup
-Beef mix boti 1 kg
-Kacha papita (Raw papaya) paste 3-4 tbs
-Cooking oil ½ Cup
-Zeera (Cumin seeds) 1 tbs
-Badi elaichi (Black cardamom) 2
-Darchini (Cinnamon stick) 1
-Sabut kali mirch (Black peppercorns) ½ tsp
-Tamatar (Tomatoes) chopped 2 medium
-Aloo (Potato) boiled 2-3 medium
-Chawal (Rice) sella ½ kg (soaked & boiled with salt until 3/4th done)
-Water 2-3 tbs
-Zarda ka rang (Yellow food color) ½ tsp
-Pyaz (Onion) fried
Directions:
Prepare Make & Freeze Biryani Marinade:
-In blender,add green chillies,mint leaves,fresh coriander,lemon juice,blend well & set aside.
-In a bowl,add yogurt,ground paste,ginger garlic paste,salt,cumin seeds,red chili powder,turmeric powder,fennel seeds,garam masala powder,green cardamom,black peppercorns,cinnamon sticks, coriander seeds,bay leaves,fried onion and mix well.Biryani marinade is ready!
-In a bowl,add beef mix boti,raw papaya paste and mix well,cover & marinate for 1 hour.
-In prepared biryani marinade,add beef and mix well,cover & marinate for 1 hour.
-Can be stored in freezer for up to 1 month (divide in two containers ½ kg in each box).
How to Use Frozen marinade to make quick Biryani:
-Before cooking,take out from freezer,defrost marinated beef in refrigerator for 6 hours/overnight or at kitchen counter for 2-3 hours.
-In a pot,add cooking oil,cumin seeds,black cardamom,cinnamon stick,black peppercorns and mix well.
-Now add defrosted beef biryani marinade (½ kg),mix well and cook for 10-12 minutes.
-Add tomatoes and mix well,cover and cook on low flame until meat is tender (18-20 minutes).
-Add potatoes and mix well.
-Add boiled rice,in water,add yellow food color and mix well.
-Add dissolve food color,fried onion,cover & steam cook on low flame for 10-12 minutes & serve!

-Blender mein hari mirch,podina,hara dhania aur lemon juice dal ker ache tarhan blend ker dein & side per rakh dein.
-Bowl mein dahi,ground paste,adrak lehsan paste,namak,zeera,lal mirch powder,haldee powder,saunf, garam masala powder,hari elaichi,sabut kali mirch,darchini,dhania powder,tez paat aur fried pyaz dal ker ache tarhan mix ker lein.Biryani marianade tayyar hai!
-Bowl mein beef mix boti aur kacha papita paste dal ker ache tarhan mix karein aur dhak ker 1 hour kliya marinate ker lein.
-Marination mein beef dal ker ache tarhan mix karein aur aur dhak ker 1 hour kliya marinate ker lein.
-1 month kliya freezer mein store ker saktay han (divide in two containers ½ kg in each box).
How to Use Frozen marinade to make quick Biryani:
-Cooking kernay sa pehlay freezer sa nikal lein aur marinated beef ko refrigerator mein 6 hours/overnight or kitchen counter per 2-3 hours kliya defrost ker lein.
-Pot mein cooking oil,zeera,badi elaichi,darchini aur sabut kali mirch dal ker ache tarhan mix ker lein.
-Ab defrosted beef biryani marinade (½ kg) dal ker ache tarhan mix karein aur 10-12 minutes kliya paka lein.
-Tamatar dal ker mix karein aur dhak ker halki ancch per gosht gul janay tak paka lein (18-20 minutes).
-Aloo dal ker ache tarhan mix karein.
-Boiled chawal dal dein aur pani mein zarda ka rang dal ker ache tarhan mix karein.
-Ab dissolve zarda ka rang aur fried pyaz dal dein aur aur dhak ker halki ancch per 10-12 minutes kliya steam cook ker lein & serve karein!
