If you have yet to check out social media phenomenon that is Spud bros then you are late to the party.    / @thespudbrothers   These are some of the nicest guys around, genuine fine young people working hard in hospitality engaging in their clientele. It’s just beautiful. We love those boys. After months of watching them serve up their spuds we just had to see what the hype was all about. People come from everywhere in the UK for a food truck serving up baked potatoes covered in what looks like baked beans. To be fair it doesn’t sound very appealing, especially to an Italian who grew up with pasta and beans.
The most popular canned beans in the UK, is the Heinz brand of beans. Hard to find in the US, but not impossible. If you want the easy way out, crack open a tin on top of a jacketed potato. However if you’re already waiting 90 minutes for those spuds to get fluffy in the middle might I suggest soaking the beans before you leave for work, take 15 minutes to get the beans on. By the time those spuds are cooked your beans will be perfect and ready to top those cheese covered potatoes. We’re not saying we have the recipe from Spud Bros. We are saying that these are the British style of beans, better than what you can buy in a tin and the combination is absolutely delicious. So much so in fact that it is officially added to our family’s rotation. Turns out teenagers here in the U.S. love em too.

British Style Beans
1T evoo
1 yellow onion
1 shallot
1t chopped garlic
2T tomato paste
16oz navy beans
64oz chicken stock
1T kosher salt
1/2t MSG
1/2t white pepper
1T Worcestershire sauce
1t tamarind concentrate
2 bay leaves
1/4c brown sugar
1/2c ketchup
2T cornstarch
1/4c water

Garlic Butter
2 sticks unsalted butter
1 head garlic
1t salt
1/2t MSG
1t sugar

8 lg white potatoes
evoo
kosher salt
aluminum foil

3 Cheddar Cheese Blend
8oz mild cheddar
4oz Beecher’s cheddar
4oz English cheddar
