Date Loaf

Okay now I know this kinda cake is a little out dated and not very modern but hear me out. Nowadays everyone is using dates as a raw/ natural caramel... sooo therefore this could be a walnut caramel cake. - if you think about it...

Anyway besides the point this date loaf is moist sweet and delicious worth the bake. The recipe is originally from the edmonds cook book however it is altered slightly to be vegan.

Written recipe
1 cup chopped dates
1 cup boiling water
1 tbsp butter (melted is easier)
1 tsp baking soda
Combine and leave to soak for 1 hour

Beaat in
1 cup brown sugar (i used 1/2 cup brown and white, then added golden syrup)
1 cup chopped walnuts
a pinch of salt

finially mix in
2 cups flour
1 tsp baking powder
Bake for 45 mins @ 180C
