Looking for a soft and spongy dosa recipe without urad dal? This 3-ingredient dosa is made using just rice, methi seeds, and puffed rice – simple, healthy, and absolutely delicious! 😍

Making dosa batter:
Rice - 1½ cup
Fenugreek seeds / Methi seeds - ½ tsp
Puffed rice/ murmura/ Mandakki - 3 cups
Salt. - to taste

Method:
1. Soak for 5 hours.
2. Drain the soaked rice after 5 hours.
3. Transfer this to a blender adding just enough water.
4. Blend smooth.
5. Transfer the prepared batter to a large mixing bowl?
6. Wash 3 cups of puffed rice, soak for a minute, and drain.
7. Transfer this to the blender and blend smooth adding little water just enough to blend.
8. Add this mixture to the previously blended rice.
9. Mix well with your hands.
10. Cover and let it ferment for 8 hours.

Making chutney:
Coconut (grated) - 2 cups
Raw mango - ¼ cup
Ginger - 1 inch
Green chilli - 1
Curry leaves - a handful
Salt - to taste
Roasted gram - 3 tbsp
Water - just enough to blend

Method:
1. Transfer all the above ingredients to a blender and blend smooth.

Tempering preparation:
Oil - 1 tsp
Mustard - 1 tsp
Asafoetida - ¼ tsp
Dry red chilli - 1
Curry leaves - 6 to 8

Method:
1. Add 1 tbsp oil to a pan on low flame.
2. Add mustard - 1 tsp.
3. Allow this to splutter.
4. Add ¼ tsp of asafoetida, 1 dry red chilli and 6 to 8 curry leaves.
5. Add the tempering to the chutney and mix well.
6. Chutney is ready.

Preparing dosa:
Method:
1. Next morning, add salt and a bit of water to the well-fermented batter.
2. Give this a good mix.
3. Pan on medium low heat; pour 2 ladles of batter onto the hot pan.
4. Keep the dosa slightly thick ; do not add any oil.
5. Flip the dosa to cook the other side.
6. Dosa is ready.
7. Repeat the same for the rest.
8. Enjoy this dosa with chutney and bhaji 😋🤤
