Stuffed Mushrooms with Artichokes and Roasted Red Peppers Appetizer

Ingredients:

15 large white mushrooms (24 oz pack)
( Peel mushrooms and chop all the stems)
1/2 cup of roasted red peppers chopped
1 can artichoke hearts drained and chopped
1 large shallot diced
1/2 feta cheese crumbled
3 garlic cloves minced
2 tbsp butter
2 tbsp olive oil
1/4 cup Italian bread crumbs
Sprinkle of sea salt
Sprinkle of pepper
Sprinkle of paprika
1/2 tsp Italian seasoning (basil, rosemary,thyme,sage, marjoram)


Recipe:

Take all your mushrooms peel them and remove the stems. Set the mushroom aside but chop all the stems and set them aside. Then chop up your roasted red pepper, you can of artichokes, your garlic and your shallot. Then set those aside and then crumble your feta cheese and set that aside. Any large Skillet heat up two tablespoons of butter into tablespoons of olive oil. On a medium high heat add your mushroom stems and your shallot and cook until the mushroom stems are tender approximately about 5 minutes. And sprinkle salt and pepper on your mushroom stems and mix up. Add your Italian seasoning mix that up. Then go ahead and add in your chopped artichokes and your roasted red peppers and at a Sprinkle of salt and a Sprinkle of pepper then mix everything saute for a few minutes. Then go ahead and add your garlic and so I'll tell you for about a minute. Then add your half a cup of crumbled feta mix it up and just keep sauteing for one more minute. Now turn off the heat. And add your quarter cup of Italian bread crumbs, you can add more if needed we just need to absorb any juices.
On a baking tray line with foil Grease the foil, add all your mushrooms and then start stuffing them . Once their stuffed sprinkle with paprika. You cook them at 400° for approximately 15 to 20 minutes maybe 25 if needed.
