These Candied Almonds are a slightly sweet, simple and healthy snack made by roasting almonds with Maple syrup and cayenne pepper and cinnamon for spice. They are such a quick snack to make and they are perfect for packing along for a day of hiking or a picnic or for gifting.

Ingredients

Raw almonds - 2 cups
Water - 3 Tbsp
Virgin coconut oil/ Ghee/ Butter - 1 Tbsp
Maple syrup/ Jaggery syrup / Honey - 2 Tbsp
Cayenne pepper - 1/2 tsp (if using Chilli powder you may want to reduce the quantity according to taste)
Ground cinnamon - 1/4 - 1/2 tsp
Salt - 1/4 tsp
Vanilla essence - 1/4 tsp

Method
Add all the ingredients except the almonds into a saucepan and bring to boil.
Reduce flame to medium-low and add the almonds and boil until all the water has evaporated, stirring occasionally.
Once the water has evaporated, keep stirring so that it gets candied evenly and doesn't burn the maple syrup.
Keep roasting until the almonds start to clump together. The whole process will take approx. 15 minutes.
Spread the almonds onto the sheet and let them cool down completely. (If you have some unabsorbed oil, try to leave it in the pan). Keep in an airtight container for storage.

Crunchy Slightly sweet and spiced candied almonds are ready to enjoy as a healthy snack for you and your family. It's perfect for gifting too.
