🥣 Ingredients

Clarified Butter (Ghee) – 1 tbsp

Vermicelli (Seviyan) – 1 cup

Milk – 1.5 litre

Dry Dates (Khajur) – 10-12, soaked in hot water

Sugar – 1 cup (adjust to taste)

Almonds – 15-20 sliced

Cashews – 15-20 (halved)

Chironji – 2 tsp

Pistachios – 2 tsp + powder for garnish

Raisins (Kishmish) – 3 tsp

Cardamom Powder (Elaichi) – 4-6

Saffron (Kesar) – 2 pinches soaked in milk

Rose Petals – for garnish

👩‍🍳 Method

1. Heat 1 tbsp ghee in a pan and roast vermicelli on low flame for 1 minute. Keep aside.

2. In a heavy-bottomed pan, boil 1.5 litre milk for 12–15 minutes on medium-low flame.

3. Add roasted vermicelli and soaked dry dates. Boil for 3–5 minutes.

4. In a separate pan, heat 1 tbsp ghee and fry almonds, cashews, chironji, and pistachios. (Do not fry raisins yet.)

5. Add the fried dry fruits into the milk mixture and simmer for 2–3 minutes.

6. Add sugar and cook till it dissolves completely.

7. Add raisins, cardamom powder, and saffron milk. Mix well.

8. Cover for 1 minute so the aroma infuses beautifully.

9. Garnish with pistachio powder and rose petals.

Serve hot or chilled — both taste divine! 😋
