Hello from Northwest Alabama! I am working on my recipe stash and I have 3 new recipes--two from newspaper clippings and one from Family Circle magazine (are they around anymore?). Plus a bonus apple pie recipe to make a request for pie after our trip to the apple orchard when we were on vacation.

Chopped Chicken Salad
1/3 c Lime Juice plus wedges to serve
3.5T Fish Sauce
1.5t Sugar
2 medium Cloves Garlic finely grated
1 small red onion, quartered lengthwise and thinly sliced
3 cups shredded cooked chicken
1/2 head green or red cabbage, 14 ounces, cored and shredded about 4 cups
4 med carrots, peeled and shredded about 2 cups
3 med jalapeno chilies, stemmed, sliced lengthwise, thinly sliced
1cup lightly packed fresh basil, torn
1 cup lightly packed fresh cilantro leaves and stem, roughly chopped
1.5 cups roasted salted peanuts, roughly chopped.
In a small bowl, stir together the lime juice through the garlic until sugar dissolves. Add the onion and let stand 10 minutes, stirring occasionally.
In a large bowl, toss together chicken through the cilantro. Pour on the red onion mixture and toss. Toss in half the peanuts, then transfer to serving bowl. Sprinkle with the remaining peanuts and serve with lime wedges on the side.

Chicken Parmesan and Herbed Oven Fries
2 large baking potatoes, 1.25 pounds, cut into 1/2 inch wedges
4 t chopped fresh oregano
2 t chopped fresh thyme
1/2t salt
1/2t pepper
4 boneless skinless chicken breasts halves (6 oz each)
1c chicken broth
3 cloves garlic chopped
1 pound grape tomatoes, halved
2T capers
1T tomato paste
1/2 cup basil leaves, torn into small pieces, plus some large leaves
1/2 cup shredded part skim mozzarella cheese
Preheat oven to 400 degrees. Place potato wedges on a baking sheet and coat with cooking spray. Mix oregano and thyme. Sprinkle 2 teaspoons of the mix on the potatoes, season to taste with salt and pepper. Bake 30 minutes at 400 degrees. Coat a baking dish with cooking spray. Add chicken, seasoning to taste with salt and pepper. After the potatoes have cooked 10 minutes, add chicken to the oven. Cook 20 minutes until chicken is almost cooked through and potatoes are tender.
Meanwhile in a skillet over med high heat, bring broth to a simmer. Add garlic and cook 1 minute. Stir in tomatoes, capers and tomato paste and season to taste. Simmer 8 minutes, stirring occassionally. Stir remaining basil mixture into sauce. Remove chicken from oven, add to skillet. Place a basil leaf and 2T of cheese on each breast. Turn off heat, cover and let cheese melt. Spoon sauce over top, serve with fries.
