Recipe:

Ingredients:

1/3 cup Sumac
1/3 cup good quality olive oil
Grated peel of one lemon
Juice of one lemon
3-4 garlic cloves
Handful of mint
Dash of salt, pepper

Preparation:

Mix all ingredients well and generously spread on spareribs
Place in smoker set to 107 degrees C or 225 degrees F for 5-7 hours
