Triple Chocolate Mousse Cake Recipe:
✅For the Cake layer:
1 egg yolk
50 grams caster sugar
90 grams milk, room temperature
40 grams neutral tasting veg oil
1/2 teaspoon vanilla extract
70 grams all purpose flour
10 grams cocoa powder
1/2 teaspoon baking powder
1/8th teaspoon baking soda
1/4th teaspoon salt
✅For the Meringue:
1 egg white, room temperature
50 grams caster sugar
✅Preheat the oven at 160 Celsius / 325 Fahrenheit and bake the cake at 160 C / 325 F for about 18 minutes or until a skewer / knife / toothpick inserted in the centre comes out clean.
✅For the Chocolate Mousse Layer:
✅For the White Chocolate Ganache:
200 grams white chocolate
66 grams whipping cream (at least 35% fat), room temperature
✅ For the Milk Chocolate Ganache:
200 grams milk chocolate (37% cocoa solids)
80 grams whipping cream (at least 35% fat), room temperature
✅ For the Dark / semi-sweet Chocolate Ganache
200 grams dark chocolate (57% cocoa solids)
100 grams whipping cream (at least 35% fat), room temperature
✅600 grams whipping cream (at least 35% fat), chilled - whipped to semi-stiff peaks and divided into 200 grams each to fold into the 3 kinds of chocolate ganache created from the above recipe.
