Описание к видео Freezer Meal Mastery: Perfect Breakfast Burritos Every Time

Breakfast Burritos are a quick and easy way to meal prep for your week ahead. These burritos are filling, delicious and can last for weeks if not months in your freezer (providing you’re able to stay away from them for that long). With just 30-45 seconds in the microwave you can have yourself a hot meal ready to hit the road with you.



Ingredients:

8 large eggs
1 Red Bell Pepper
1 Green Bell Pepper
½ Large Vidalia Onion
1lb Breakfast Sausage
8 – 8-10” Flour Tortilla Shells
2TBS Milk (for scrambled eggs)
1 ½ C – Shredded Sharp Cheddar
1TBS – Unsalted butter (for the vegetation)



Prep:
Dice up your vegetables. I would do a fine dice on them. If you do too large of a dice it can be rather clunky and you could end up with big pieces of pepper piercing your tortilla shell

Crack your eggs into a bowl, add your milk and then beat them thoroughly until the mixture has come together and you don’t have any of those stringy egg white parts


Cooking:
Over medium / medium-high heat cook your breakfast sausage. I like to flatten it out as much as I can and let it brown completely before breaking it up. If you break it up too early you don’t get as much browning.

Once complete pour the sausage into a bowl and set aside to cool.

Return the pan to high heat and add a tablespoon of unsalted butter and then add your veggies. I cook them on high for a short period of time in order to help them maintain their crunch.

After about 3 minutes create a well in the middle of your veggies and dump in your scrambled eggs. Once the eggs come together you can re-incorporate your breakfast sausage.

Take your now cooked filling and place it in a bowl to cool completely. This step is VERY IMPORTANT! If you add the mixture to your tortillas while it’s still warm it will steam from the inside and create mushy textures. Gross.


Assembly:
Roll em’ up! I used a 2/3 measuring cup but you can make them as fat or thin as you want them.


Storage:
Wrap em’ up! Cut yourself squares of parchment (or wax) paper and roll each burrito individually. Store them in a Ziplock bag in your freezer.


Reheating:
Take 2 – 3 sheets of paper towel and soak in cold water. Take the wet paper towel and wrap around your frozen burrito and throw that thing into the microwave on high for 30 – 60 seconds depending on the thickness of your burrito and the strength of your microwave.
