I promise, it will be fine... Well, for the collards anyway. I don't know about the cake! 😂 Hey family!! In today's video it's a slow Saturday around here. Titus, Jake, and Tyler go riding with Uncle D while the rest of us play games & watch movies because once again, it's raining... Surprised?! 😂 I make a switch on supper plans and make Smoked Sausage & Collard Green Stew and it is so good y'all! It's definitely a country as cornbread supper though, so if you don't like collards you can switch them out for turnip greens, or just make the sausage and beans. We loved it! 🤗💕 I also make a cake for Titus to try because he's been eating a little different the past week or so and it is .... different... 😆😂

Smoked Sausage & Collard Green Stew
Here's the link to the original recipe. I used collards greens instead of turnip greens because we like collards better. 😁👍 We left out the leeks too. I also added more sausage and broth to make more.

Here's how I made it! 😁👍
Ingredients:
1 (1-lb.) package fresh chopped collard greens
1 onion, diced
3 cups diced smoked sausage, sliced
2 olive oil
salt & pepper to taste
1/2 tsp garlic powder
2 (15-oz.) cans white beans, drained and rinsed
1 (48oz) container reduced-sodium chicken broth
¼ cup grated Parmesan cheese

Directions:
Heat oil in a large pot over medium heat. Add diced onions and cook for 3-5 minutes. Add sliced smoked sausage and cook another 5 minutes. Add all other ingredients except the parmesan cheese and bring to a boil. Reduce heat to simmer and cover. Cook 15 minutes. Add parmesan cheese and cook another 5 minutes.

For the cornbread we used the recipe on the back of the Three Rivers cornbread mix. 😁👍
