Hello :') welcome to my first youtube video.
I am very nervous; this is my first time editing a recipe video.
I wanted to upload on youtube as this recipe requires a lot more steps ~
I made the faces by tempering the chocolate chips, the chocolate chips I am using are Callebaut brand. You can get any chocolate chips and look up steps on youtube how to temper chocolate. There are many tutorials how to temper chocolate. I will also make a tutorial video how I prepare the cute faces in my pastries ^^!

For coloring I suggest to use 'oil base' coloring. If you use other types of coloring it can break the fat/butter in the chocolate.


Coffee Custard Cream:
200g milk
vanilla bean
2 large egg yolk
50g sugar
15g corn starch
10g cacao powder
5g coffee powder
15g cold unsalted butter


Eclair Choux Pastry:
50g water
50g milk
55g cold unsalted butter
1 tsp sugar
1 tsp salt
5g cacao powder
55g bread flour
95g eggs ( 2 Large Eggs )

Chocolate Ganache
80g chocolate chips
80g heavy cream (35%-40%)

Tip:

Preheat oven to 200C once you finished piping your eclair, turn the heat down to 170C and bake for 40-50 mins

Use a perforated mat, the mat will bake your eclair more beautifully~

I suggest not to change any ingredients in the recipe, it will change the dough/texture.
