If you've ever had a small, backyard style, offset smoker that you just couldn't seem to get to run right this hack is for you. The issue with trying to run a small offset smoker is you need to build a big enough fire in the fire box to burn clean, but the manufacturers have to create a large enough opening to let all of the hot air pass through the fire box. So what you end up with is a lot of almost direct, radiant heat on about half of your cook chamber which makes it almost unusable for low and slow applications. While there are several ways to address this, my favorite way is with what I call the water baffle. Get a half size aluminum pan, you could use any pan if you want, I just like these aluminum ones so once they get messy I can just toss them. Fill it halfway to three quarters with water, bend the side that will face the fire in slightly and push it right up against the opening to the fire box. This leaves plenty of room for the hot air to get in, but now it first comes into contact with this pan of water so it looses a lot of energy trying to heat that pan. In my experience this has greatly evened out the grate temperatures on my offset and allows me to build a bigger fire, without forcing me to use extremely high temperatures in my cook chamber.
