Authentic Emirati Harees with Mutton Recipe
Harees is a traditional Emirati dish, perfect for festive occasions or Ramadan. It’s made with simple ingredients but delivers a hearty and flavorful meal.

Ingredients
• Mutton (with bones): 1kg leg big pieces
• Wheat (harees or cracked wheat): 2 cup (soaked overnight)
• Water: 8–10 cups (hot water to save time)
• Salt: To taste
• Ghee: 3 tablespoons (for serving)
• Cinnamon powder: 1/2 teaspoon (optional, for garnish)

Instructions
Step 1: Prepare the Wheat and Mutton
1. Soak the cracked wheat overnight for best results.
2. In a large, heavy-bottomed pot/pressure cooker, add the mutton pieces and water. Bring to a boil and remove any foam that rises to the surface.
Step 2: Cook the Harees
3. Add the soaked wheat to the pot with the mutton. Lower the heat and cover the pressure cooker. cook on high heat until 1st whistle then lower the heat and cook for 45 minutes then release the steam naturally. If cooking in a pot the let it simmer gently for about 3–4 hours, stirring occasionally to prevent sticking.
4. As the mutton cooks, it will start to fall off the bone, and the wheat will break down into a porridge-like consistency.
Step 3: Blend the Mixture
5. Once the mixture is soft and well-cooked, remove the bones and shred any remaining mutton pieces.
6. Use a wooden spoon or an immersion blender to mash the mixture into a smooth consistency. This step is crucial for the authentic texture of harees. Ajust the consistency by adding hot water if need be.
Step 4: Season and Serve
7. Add salt to taste and mix well.
8. Drizzle ghee over the harees while serving for a rich flavor. Garnish with a sprinkle of cinnamon powder, if desired.
Serving Suggestions
• Serve hot with a side of fresh salad or yogurt.
• Pair it with dates for a traditional Emirati meal.
