UPDATE:
After the video I installed the new PAS sensor and removed the old one. I was able to use pedal assist as normal and could use either/or as I pedalled. With pedal assist turned on I can now see what speed I am going without having to hold down the throttle. To remove the old PAS metal sensor, a proprietary tool was needed. I spent $15 to purchase this tool from amazon.

A lot of entry level e-bikes come with the pedal assist function only. This means that in order for the motor to engage and move you forward, you have to pedal the bike. While this is fine for most circumstances it's also a lot more fun to just push the button of a throttle to get you on your way, especially from a stand still. This video will show how I took a Hyper bike and converted it to one with a throttle. I am not a professional. I just did this for fun to see if it was possible. Bear in mind that using the throttle and this method will reduce the battery life and range of your bike. However, I don't generally ride more than 25 km's in one go so it has yet to be a problem.

One further note is that the new display has a bunch of settings that can be configured. One of which controls what speed your display is showing and it's accuracy. Here are the settings I used once the new display was installed.
