Here is the Polos Cutlet recipe

Preparation time - 2.5 hours
Serves: 4 people

Ingredients
●1kg of polos (young jack fruit)
●500g potatoes, boiled and mashed
●150g onions, chopped
●50g green chillies, chopped
●1 teaspoon dried chilli pieces
●1 teaspoon pepper powder
●5-10 curry leaves
●4-5 seeds of tamarind puree
●5-6 cloves of garlic, chopped
●1-inch ginger, chopped
●½ teaspoon of turmeric powder
●1 teaspoon chilli powder
●500g bread crumb
●1 litre of coconut oil to fry
●Salt to taste

Batter:
●200g flour
●1 egg
●1 tablespoon cornflour
●Water
●Salt

Method
1. Boil the jackfruit with salt for 1 – 1 ½ hour until tender.
2. Remove from water and scoop the middle with a spoon or knife.
3. Chop it and press with a fork until mashed. Transfer the mixture into a bowl.
4. Heat a pan with oil and add finely chopped onion, garlic, ginger, curry leaves, chillies and sauté.
5. Add the mashed polos and add the spices, chilli pieces, turmeric, chilli powder, pepper and tamarind puree. Mix well.
6. Add the boiled potatoes and combine. Adjust the seasoning and divide the jackfruit mixture into balls.
7. Make a light batter by mixing flour, egg, cornflour salt and water. 7.Dip the cutlet balls in the batter and roll in the breadcrumbs. Set aside.
9. Heat the coconut oil in a deep pan and fry the cutlets until golden brown. Serve hot.
