Mangalore cucumber sambar which is also called as Sauthe Koddel is a coconut based curry. The spices and coconut are roasted well before grinding which gives a unique aroma and taste to the curry. This is an authentic Udupi recipe and can also be called as a Satvik food as it does not include any onion or garlic.
Serve this sambar with hot steamed rice especially white rice for the great taste.

Ingredients:
1. Mangalore Cucumber - 1
2. Dry red chilly (Byadagi) - 6-7
3. Urad dal - 1tsp
4. Chana dal - 1 tsp
5. Coriander seeds - 1 tbsp
6. Cumin seeds - 1/2 tsp
7. Mustard seeds - 1/2 tsp
8. Fenugreek seeds/Methi - 1/4 tsp
9. Coconut (fresh)- 1 cup
10. Turmeric - 1/4 tsp
11. Curry leaves - 1 sprig
12. Tamarind - small gooseberry size
13. Jaggery - 2 tsp
14. Corainder leaves - 2 tbsp
15. Oil - 1 tsp
16. Salt
Tempering:
17. Oil - 2 tsp
18. Mustard seeds - 1/2 tsp
19. Dry red chilly - 1
20. Asafoetida/Hing - pinch
21. Curry leaves - few
