1. ATTA HALWA RECIPE
Ingredients:
• Ghee - 3/4 cup
• Atta - 1 cup
• Sugar - 1/2 cup
• Water - 1 cup
Recipe:
1. Take a kadai or pan, keep the flame on medium and add ghee.
2. Add atta and start stirring. Keep stirring till the colour changes to dark brown.
3. Add sugar, stir on low flame and then add water.
4. Mix well till it comes together. Once the halwa starts leaving the sides and the ghee separates, it’s ready!
2. EGGLESS CHOCOLATE BROWNIE RECIPE
Ingredients:
• Maida/All-purpose flour - 3/4 cup
• Cocoa Powder - 1/3 cup
• Salt - A pinch
• Baking Powder - 1 tsp
• Butter - 1/2 cup
• Dark Chocolate Compound - 1 cup
• Sugar - 3/4 cup
• Vanilla Essence - 1 tsp
• Curd - 3/4 cup
• Espresso: 1 tsp coffee + 2 tsp warm water
Recipe:
1. Mix all the dry ingredients together in a bowl: Maida, Cocoa Powder, Salt, Baking Powder.
2. Melt butter and chocolate together in a double-boiler. Keep stirring.
3. Once melted, remove from the heat and add sugar, vanilla essence and espresso (mixture of coffee and warm water). Mix till the sugar dissolves.
4. Add curd and mix.
5. Combine the dry ingredients with the wet ingredients. Mix in one direction and do not over-mix.
6. Transfer to a lined baking tin with oil/butter and butter paper. Tap on the surface to remove air bubbles.
7. Bake in a preheated oven for 30-40 mins.
8. Insert a toothpick and it should come out clean. If not, bake for another 5-10 mins.
9. Let it cool down before taking it out. Serve with some vanilla ice cream and chocolate syrup. Enjoy!
3. GAJAR KA HALWA RECIPE
Ingredients:
• Carrots - 2.5 kg
• Ghee - 1 tbsp
• Milk - 3 litres (for halwa) + 1 litre (for khoya)
• Elaichi - 1pc
• Pinch of Salt
• Few Kesar Strands (optional)
• Sugar - 1 cup (for halwa) + 2 tbsp (for khoya)
• Dry Fruits
• Khoya
Recipe:
1. Peel, wash and grate the carrots.
2. To a kadai, add some ghee and the grated carrots. Stir and let them cook for a few minutes till they start reducing.
3. Then, add 3 litres of milk along with elaichi, pinch of salt and a few kesar strands. Keep stirring and let it cook properly on medium to high flame.
4. Once the milk has reduced to about 50%, add sugar and mix.
5. Once the desired consistency is achieved, add chopped dry fruits of choice. Mix, serve with a layer of khoya and enjoy!
6. Khoya: I have made khoya at home. For that, season the kadai with some ghee, add milk and start reducing it. Add sugar once the milk has reduced to half and keep stirring.
4. OREO CHEESECAKE RECIPE ❤️
Ingredients:
• Oreo Biscuits - 2 Packet
• Butter - 2 tbsp
• Cream Cheese - 180gm
• Powdered Sugar - 1/2 cup
• Condensed Milk - 200gm
• Vanilla Essence - 1 tsp
• Fresh Cream - 200ml
• Curd - 1/4 cup
• Corn Starch - 1 tbsp
• Water (For Steaming)
Recipe:
1. Separate the biscuits and cream. Grind the biscuits.
2. l Transfer the crushed biscuits to a bowl and add some butter. Mix.
3. l Make a base at the bottom of the cake tin. Bake it in a preheated oven for 10-15 mins. (Optional)
4. Take a bowl, add cream cheese, powdered sugar and whisk it well (Till it becomes frothy). Add condensed milk, vanilla essence, curd, fresh cream, corn starch, crushed oreos and mix (Do not overmix).
5. Transfer the batter to the cake tin, cover with aluminium foil and “steam-bake” for 1 hour.
6. Let it cool down and refrigerate for 4 hours. Top it with your favourite toppings and enjoy!
5. PLUM CAKE
Ingredients:
Black Raisins - 50gm
Brown Raisins - 50gm
Green Raisins - 50gm
Tutti Frutti - 50gm
Orange Juice - 3 cups
Sugar - 1/4 cup
Jaggery - 1/4 cup
Butter - 100gm
Brown Sugar - 1 tbsp
Condensed Milk - 1/2 cup
Vanilla Essence - 1 tsp
Maida/Wheat Flour - 1 cup
Cinnamon Powder - 1/2 tsp
Nutmeg Powder - 1/4 tsp
Ginger Powder - 1/2 tsp
Clove Powder - 1/4 tsp
Pinch of Salt
Baking Powder - 1/2 tsp
Baking Soda - 1/8 tsp
Orange & Lemon Zest
Dry Fruits (Optional for topping)
Recipe:
1. Soak raisins and tutti frutti in orange juice for atleast an hour. You can soak them for as long as you want, the more, the better.
2. Take a pan and add sugar. Once it melts to a beautiful golden colour, add jaggery/gud. Keep cooking and mixing till it turns into a dark colour with a syrup-like consistency. This is black jack.
3. Now take another pan, add orange juice, butter, brown sugar and a part of the black jack. Mix. Add condensed milk, vanilla essence and the soaked fruits. Mix.
4. Take a bowl, sift and add maida, cinnamon powder, nutmeg powder, ginger powder, grated clove, salt, baking powder, and baking soda. Mix.
5. Add the wet mixture, orange and lemon zest and combine wall.
6. Line a baking tray with oil and butter paper. Transfer the batter, top with dry fruits and bake it at 150C for 60-75 mins.
