Moussaka: Vegetables
3 lbs (1.4 kg) eggplants, sliced ⅓-inch thick
2 lbs (900 g) Yukon Gold potatoes, peeled & sliced ¼-inch thick (optional)
1 tbsp kosher salt
Olive oil or vegetable oil for frying

Meat Sauce
2 tbsp olive oil
1 large onion, finely diced
4 cloves garlic, minced
2 lbs (900 g) ground lamb or beef (or mix of both)
3/4 cup dry red wine (optional)
1 14 oz can crushed tomatoes
3 tbsp tomato paste
1 cup beef stock
1 tsp sugar
1 tsp cinnamon (or 1 stick)
2 tsp dried oregano
1 bay leaf
3–4 whole cloves (optional)
Salt & freshly ground black pepper, to taste

Béchamel Sauce:
4 oz (113 grams) unsalted butter
4 oz (113 grams)
all-purpose flour
4 1/2 cups whole milk
2 egg yolks
½ tsp grated nutmeg
1 tsp salt
1/2 tsp white or black pepper
1 1/2 cups grated Kefalotyri, Parmesan, or Pecorino Romano cheese
